Kochin style biriyani - recipe by Rinky



[note: this recipe is made by my friend Rinky she is an excellent cook.hope you all like this]

  1. Boil water in a basin, for fragrance add cinnamon to it.
  2. After boiling add basmati rice and salt(a tea spoon) into it, you can add a lemon juice to it ,that make the nice not sticky.
  3. Separate rice into a new plate.
  4. Fry chicken after mixing with chilly powder,coriander powder, turmeric powder,chicken masala, and a little lemon juice.
  5. Chop the following items- Onion(big),green chilly,garlic,ginger,
  6. Prepare a paste of ginger,green chilly and garlic.
  7. Warm fry pan with coconut oil.
  8. Saute the following -big onion,garlic,green chilly,ginger
  9. Then add chilly powder,turmeric powder and chicken masala and salt mixed it properly. after that mix fried chicken pieces with it. wait for some times to make all masala properly settled in the piece.
  10. Use some ghee to cover a big basin then add spread boiled rice over it.spread coriander leaves over it (use chops).now spread chicken pieces over it.then again add rice over it. make sure all are pressed tight. cover it and allowed into heat after 10 min .Turn off flame and serve in hot.
