Zest - Flavouring agents..

Zest is a food ingredient that is prepared by scraping or cutting from the outer, colourful skin of unwaxed citrus fruits such as lemon, orange, citron and lime.

Don't waste the zest, that is the outer skin of citrus fruits.Before squeezing, pare the zest and store it in an airtight container in the freezer, adding to it continually.Use it as desired, to flavour some dishes.
