Carbonara - Italian pasta dish

Carbonara is a pasta dish of Italian cuisine.Frequently used pasta for this is spaghetti, but other variants like fettuccine, rigatoni and bucatini were also used.Eggs,cheese,bacon and black pepper are the other ingredients for this.

The pork is cooked either in olive oil or butter.The hot pasta is then mixed with raw eggs and cheese.Then the whole thing will be seasoned with either olive oil or butter along with black pepper.

Russian salad or Olivier salad

Russian salad or Olivier salad is a cooked vegetable salad of Russian cuisine.Usually this is prepared with diced potatoes,vegetables,eggs and sometimes ham may be used.The dressing of the salad will be done with mayonnaise.

Fettuccine alfredo:an Italian delight

Fettuccine alfredo is a pasta dish made from fettuccine pasta tossed with parmesan cheese and butter.

       Ingredients:

  1. 1 pint heavy cream
  2. 1 stick of butter
  3. 2 table spoons cream cheese
  4. 1/2 to 3/4 cup Parmesan cheese
  5. 1 teaspoon garlic powder
       Method:

  • Combine butter,cream cheese and heavy cream in a sauce pan.
  • Simmer until melted and mixed well.
  • Add Parmesan cheese and garlic powder.
  • Simmer this for 15-20 minutes on low.You can add milk to make it out of too thick.
  • Pour over fettuccine.

Ingredients required for Irish stew:

  1. 2 table spoon vegetable oil
  2. 500 gm mutton/lamb cut in to 5 c.m chunks
  3. 1 cup onion roughly chopped
  4. 1 cup leaks,cleaned and finely sliced
  5. 1 cup carrots,roughly chopped
  6. 750 ml dark beef stock
  7. 2 or 3 cabbage leaves thinly sliced
  8. salt and pepper
Method of preparation:

  • In a large frying pan,heat half of the oil.Add half lamb pieces and brown all over.Remove the lamb and place in a casserole, cover with half of the potatoes, onion, leaks and carrots.
  • Add the remaining oil to the frying pan,heat again then add the remaining lamb and brown all over.Add to the casserole and cover with the remaining vegetables.
  • Add the stock, cover with a tight filling lid,cook in the oven for 1 hour.Add the cabbage.The meat and vegetables should always be covered by liquid.Season with salt and pepper.

Margarita:typical tequila based cocktail

Margarita is a world famous Mexican cocktail, made with tequila mixed with orange flavoured liqueur or lime juice.The peculiarity of the drink is that,while we serve this to a guest,there should have some ice salt on the glass rim.And the guest can enjoy the drink along with the salt on the glass rim.

Merry Christmas rice: Have a very special Christmas


How we can make Merry Christmas Rice.Let's check the ingredients first;

  Ingredients:

  1. Rice-1 cup,uncooked.
  2. Onions-1/4 cup,finely chopped.
  3. Green capsicums-1/4 cup,chopped.
  4. Red capsicums-1/4 cup,chopped.
  5. Celery stalks-1 large,finely chopped.
  6. Butter-2 tea spoon.
  7. Vegetable stock or water-1 cup.
  8. Salt as per taste.
  9. Black pepper powder- a pinch.
 Method:
  • Heat butter in a non-stick pan over a medium flame.
  • Saute the onions,capsicums and celery for a minute.
  • Bring the vegetable stock or water to boil in another pan.
  • Add the rice, sauted onions,salt and pepper powder.
  • Cover and simmer over low flame for 8 to 10 minutes or until the rice is cooked.
  • Add the sauted capsicums and celery stalk,stir well and transfer to a serving dish or platter.
  • Serve hot.

Parotta making in Kerala style -- Kerala Parotta.

Since my childhood i ate parotta, soft and warm layered kerala parotta. Parotta and beef curry is an awesome combination. yes, may be you too have a story of parotta from your childhood. here is mine.


well at the time of summer vacation me and my sister fight day and night for silly things. my mother always feel headache because of this. well , in the mean time papa came home for vacation from his work place.

we were glad and walk around papa to hear new stories and travel outside home. And me and my sister planned to watch a movie. we proposed our request to papa.

"actually do you want to see the movie"-- papa asked
and we say "yes".

we went for the movie, i don't find the movie is interesting that one was love and drama. i was expecting some fight and bike jumping.

anyway i told papa that i want parotta. At the same time , sister supported me. my father won't angry.

he took us to a hotel while movie was running half.
"we ate hot and delicious parotta and beef curry".

still my papa says "you two , were skipped the movie because of taste of parotta. ".


Yes that was a bit of story. but now i get confused how to make parotta in kerala style. Of course i did googling.I am here by sharing you two of the best videos.One is hilarious and other one without commentary.

Most important things of parotta making is 

1. mix the maida flour as soft as possible.
2. making parrotta base stretch as much as possible and hold it nicely.
3. bake it.

Cocktail sauce

Cocktail sauce is also known as Marie rose sauce.This is a cold sauce but sometimes served at room temperature also.This is an usual accompaniment for sea foods such as prawns,shrimps etc.This is invented by a British chef named, Fanny Cradock.

It is a combination of equal portion of tomato sauce and mayonnaise along with other ingredients such as cream,worcestershire sauce and tabasco sauce,and seasoning will be done with pepper.After this it will keep in the refrigerator for atleast one hour to develop the flavour.
